Blueberry Protein Pancakes

Ingredients:

  • 1/2 cup of dry rolled oats
  • ½ up of low-fat cottage cheese
  • ½ cup of liquid egg whites
  • ¼ cup blueberries
  • 1/8 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • Optional half banana

Directions:

Blend all ingredients except blueberries. Spray large skillet or griddle with nonstick cooking spray. Pour 4 separate dollops of batter to form pancakes. Add blueberries to individual pancakes. Heat on medium for approximately 90 seconds per side.

Optional: top with additional fresh blueberries and sliced fresh banana.

Makes 2 Servings.
